Started the day by grabbing our rental car from the airport. We are heading out early tomorrow and the airport is out of the way, so this was just easier. But this was Matt’s first time driving on the left side of the road… with a manual on the left side… and in the rain! He liked it! (So glad I don’t have to drive 😅, he chose the manual and I can’t drive stick sooo )
Very rainy day up until around 2pm. After getting the car we dropped it off at the Airbnb and took the bus to the Royal Mile where we joined a tour group for the underground vaults!

These vaults were originally used for business and or storage but they were made of limestone, which is a very porous stone. Water and sewage would leak through the stone forcing the merchants to move out. Eventually, these became inhabited with the homeless and homelessness actually became illegal. Because the vaults were wet, cold, and dark, they quickly became inhabitable and were sealed up by the city. Nearly 100 years later, they were rediscovered and opened up for historical tours. Now the vaults are deemed one of the most haunted places in Britain.

After the tour, we were ready to eat! Haggis is the national dish of Scotland. It’s composed of ground sheep liver, heart, lung and oatmeal, cooked in sheep’s stomach lining. While yes, that sounds disgusting, it was actually pretty good! Served with neeps (mashed turnips) and tatties (mashed potatoes) . This one served with a whiskey mustard sauce.

Continuing on! The rain finally lightened up and we walked through the University of Edinburgh and strolled through The Meadows park.

This is Dean Village! The remains of a small milling village. So beautiful!

And lastly, dinner!!
